New restaurant opens in Babbel's old premises - Nordiska promises a unique dining experience

A new operator is arriving on the Borås restaurant scene, in the premises where the bankrupt restaurant Babbel used to be. Nordiska, a restaurant focusing on seasonal dishes from the Nordic countries, has just signed a contract with the landlord Bostäder i Borås. With a unique concept that combines traditional flavours with modern innovation, the young couple Viktor and Elise aim to attract both local food lovers and visitors. And they plan to open as early as April.

- Our aim with Nordiska is to create a restaurant where every meal is an experience, says Viktor Larsson, chef and co-founder. We want to introduce new flavours that our guests will not find anywhere else in Borås. One example is my elk steak tartare with wasabi, a typical ingredient but with an unexpected twist.

The premises will undergo some renovation, including a new opening towards the kitchen to create a more interactive dining experience, and a modernisation of the interior to reflect the Nordic aesthetic.

- We want to create a cosy and welcoming atmosphere, says Elise Murphy, customer manager and the other half of the founding duo. The food should not feel contrived, it should be good, tasty and a little exciting. Our focus is on creating a place where people like to gather and enjoy themselves together.

Bostäder i Borås chose to work with the couple after seeing their well-founded business plan and clear vision, which align well with the housing company's goals for developing and improving Borås.

- It is of course always sad when an operator goes bankrupt, says Irmin Oglecevac, head of the premises business area at Bostäder i Borås. Babbel was also a big part of the city centre for many years. At the same time, everyone involved is glad that we have found promising new operators so quickly, who wanted to take over the bankruptcy estate and run a new business in these fine premises. This is the best possible solution for everyone and we are very pleased to welcome our new tenant. We think Nordiska will add an exciting concept to the city centre that appeals to the people of Borås.
